*Tart au Fraise*
French fruit tarts are popular. In this dessert, whole and sliced strawberries are arranged on a layer of rich cream made with cream cheese and Madagascar vanilla bean.
A strawberry glaze adds sheen to the finished dessert. And finally some lime zest to kick it up another nudge!
There are different variations to this delicious dessert!
The base can consist of: Pâte Sablée — pâte feuilletée or pâte brisée.For the filling you have different cream options also, like: Crème pâtissier — Crème Chantilly, etc.
As I’m always experimenting and trying different combinations of taste and texture. I’m convinced that the best choice for this base is the “Genoise”!
This light and fluffy sponge cake offers a perfect medium to absorb the “embibage” for this delightful dessert.
I have chosen to add a strawberry liquor to the “embibage” to compliment the overall taste of this tart. For the “strawberry Lovers” I would say, this is a “must try” dessert!
Last but not least, I like to mention that the strawberries on this “dessert display plate” was handpainted “freehand” with food colours and melted cacao butter!
