Start these moist and flavorful homemade cookies by beating 1/2 cup of shortening in a large mixing bowl on medium for 30 seconds. Add 1/2 cup of sugar, a teaspoon of baking powder, a teaspoon of ground ginger, 1/2 teaspoon of baking soda, 1/2 teaspoon of cinnamon, and 1/2 teaspoon of ground cloves. Beat these ingredients until well-combined. Add 1/2 cup of molasses, an egg, and a tablespoon of vinegar, beating the gingerbread man mixture again. Gradually add in 2 1/2 cups of all purpose flour, beating it on medium low. Stir in the remainder of the flour with a spoon, if necessary. Divide the gingerbread cookie dough in half, cover each half, and chill them for about three hours. Preheat the oven to 375 degrees. On a lightly-floured work surface, roll half of the dough to 1/8-inch thickness. Use cookie cutters to form them into the shapes you’d like. Bake the cookies in the oven for about five minutes on greased baking sheets. For actual gingerbread men, roll the dough about twice as thick as this gingerbread cookie recipe.
